IGT Veneto Passito Rosso "Dolcengo" – Le Pignole Rossi In the glass it standsA rare and captivating red passito, born from Tai Rossothe emblematic grape of the Colli Bericiprocessed using a method that requires absolute patience and dedication. The grapes are hand picked in the first week of October and then undergo drying at controlled temperature and humidity for 4 5 months. This is followed by pressing, cold maceration (5 6C) for 5 days, and fermentation for 20 25 days at 16 17C. Aging takes place in second and third use
