Oil residue from coffee builds on these mechanical parts and ground coffee becomes very irregular. A note on the "rice" myth : Rice is way to small to efficiently clean a grinder. Rice can also contain much more harder grains which could damage the grinder's motor. Grinds are made only from natural and non toxic ingredients.
