Taylor's Vintage 2011 Winery: PazacCLIMATE & TERROIR: A climate with warm summers and cold winters. The terroir has elements of slate and schist VINIFICATION: After the intensive soaking period, the fermentation continues in progress. When approximately 8% is reached the process is stopped by addition of wine alcohol, after which the wine rests for almost 2 years wooden barrels. Further maturation takes place in the bottle.
